Grilled Sausage
Grilled sausage is a classic of Brazilian barbecue, always the first to be ready while other meats cook. It can be Italian, smoked, or pork sausage. The secret is not to pierce it and grill over medium heat.

- 500g Italian or smoked sausage
- Charcoal or gas for grill

Prepare the grill with medium coals (you should be able to hold your hand 20cm above for 4-5 seconds).

Place whole sausages on the grill (do not pierce!).

Grill for 7-8 minutes on one side until golden.

Flip and grill 7-8 more minutes on the other side.

Sausage is done when evenly golden and firm to the touch.

Remove and let rest for 2 minutes before slicing.

- β¦ If sausage is flaming, move to a cooler area of the grill.
- β¦ Medium heat is essential: high heat burns the outside while leaving the inside raw.
- β¦ For pan-frying, add a bit of water and cover until dry, then brown.
